My wife Kate and I bought this three-bounder from the Lobster Shack in Crail, Fife here in Scotland last year. The guy picked it from the tank and boiled it there and then. He also showed me how to split them, which was great. My tip – wear protective clothing when cracking the claws. Wonderful with appropriate Loire or Burgundy!

Why did you decide to join Mott MacDonald?

I was offered a permanent position straight after university (University of Edinburgh) as I had been employed as an intern during the two summers before I graduated. I applied to Mott MacDonald as a graduate because I felt the company had good international prospects and had good central offices in major cities.

What is the best thing about your role?

I work with a fun, dedicated, diverse and, most of all, supportive team. I know they are behind me in everything I try to achieve.

How would you describe the culture of Mott MacDonald?

Supportive and inclusive.

What project(s) are you currently working on?

I am a contract administrator and project manager on the Ayr and Crosshouse hospitals (£45m hospital development in Ayrshire), project manager on an Outline Business Case project for a large Higher Education project and I manage a team of construction Supervisors on a £60m hospital project in Glasgow. I am also currently delivering training in NEC Contracts and Microsoft Access 2010.

What has been your favourite Mott MacDonald social event?

WaterAid Munro climbing in Perthshire.

If you could go on a road trip with any one person (dead or alive), who would you choose and where would you go?

Sir Laurens Van der Post.
